Erica Honey

Tree heath honey is mainly produced in Sardinia.
It is characterized by a notable turbidity, acidity and speed of degradation, but has very original organoleptic characteristics.
It is cloudy even when it is liquid, it crystallizes quickly. It has a dark amber color with reddish reflections when liquid, and orange-brown when crystallized. Smell and taste are medium intense, persistent in the mouth.
The smell is fresh, reminiscent of caramel, coffee powder, chamomile, turmeric and saffron.
The aroma recalls toffee, tamarind, creme caramel and licorice.
In the kitchen it can be combined with seasoned and spicy cheeses, and as "table" honey, tasted alone, it does not give a quick sense of satiety like other honeys.
