Asphodel Honey

Asphodel is a typically Mediterranean plant widespread especially in Sardinia, where the most consistent productions of this honey come from. Organoleptic characteristics: light or very light coloured, crystallized honey tending towards white with pearly reflections with a weak or medium intensity odor and aroma. It tends to crystallize forming fine crystals.
On the nose it is reminiscent of asphodel flower but also of almond, chamomile and citrus fruit.
The taste recalls sweetness like cotton candy and vanilla but without being cloying.
In Sardinia it is used for the preparation of desserts and gala dishes.
